When I was a kid, there was nothing I liked better than spending time with my grandmother. We would bake chocolate chip cookies together and she would pass along great sewing tips and she taught me how to fry a pork chop perfectly in a cast iron skillet.

I have such fond memories of hanging out in her kitchen and waiting for her to finishing stirring the cookie dough batter so I could stick my own spoon in there for a snaffle. I love to create these same fond memories for my daughters.

Lately it seems we have this little tradition in my home where we have breakfast for dinner. We all have very busy schedules and for some reason breakfast for dinner just seems to work well for us on those busy days. My kids really look forward to breakfast for dinner and it just makes it easier for me to make it happen when they are excited about Breakfast Night.

I am a believer that having little traditions is an important part of making my family strong. All these traditions we create make it easier to spend family time together, especially since my children are growing up so fast on me. These traditions will be a powerful tie that holds my family together for a long time. ☺

National Hot Breakfast Month

Did you know it is National Hot Breakfast Month this February? Here I have been in having breakfast for dinner for years and Krusteaz has earmarked Wednesdays as Breakfast Night! So in honor of Krusteaz's Breakfast Night, I made Chocolate Chip Cookie Dough Pancakes. I wanted to honor our family tradition and bring some of my grandmother into the whole Breakfast Night.

I have been been so impressed with the flavors of the Krusteaz mixes. You simply add water to the pancake batter, and with a few more ingredients, you can have a yummy pancake!

Creating Traditions

My tip to you creating a Breakfast Night tradition in your own home is simple. Create a tradition you want your kids to remember. As I think back on my own memories of my grandmother, I remember the warmth of them the most. They are the times when I was most happy. I want to create the same warmth for my children.  A delicious breakfast for dinner together is the perfect way to create these kinds of lasting memories.

And so today for Breakfast Night, we are having Chocolate Chip Cookie Dough Pancakes. I am not lying when I say that they were truly the best pancakes I have ever made. The combination of the Krusteaz Buttermilk Pancake, the chocolate chip cookie dough and the fresh berries is simply amazing!

Chocolate Chip Cookie Dough Pancakes


Homemade Chocolate Chip Cookie Dough

Ingredients:

½ cup unsalted butter, softened
⅓ cup light brown sugar
1 teaspoon vanilla
8 ozs cream cheese, softened
½ cup powdered sugar
¾ cup semisweet mini chocolate chips

Directions:

1. In a bowl, melt the butter, brown sugar in the microwave in 30 second increments, stirring in between, until the brown sugar is dissolved. Then stir in the vanilla, and pop the bowl in the freezer to quickly cool it down.

2. In another bowl, add the cream cheese and powdered sugar and mix. You can use a mixer or a spoon. I usually just do this by hand until it is smooth. Take the other mixture out of the freezer and add them together. FEEL the batter - if the batter is still warm, do not add the chocolate chips or they will simply melt. Pop it back in the freezer if it is still warm. Once the mixture is cool, then add the chocolate chips and stir AND refrigerate until ready to use.


Chocolate Chip Cookie Dough Pancakes


Ingredients:

½ teaspoon vanilla
2 cups Krusteaz Buttermilk Pancake batter AND 1⅓ cup water
1 Tablespoon of RAW honey
½ teaspoon cinnamon

Directions:

1. PER Krusteaz Buttermilk Pancake box: Stir the pancake mix and the water together with a wire whisk in a bowl. The batter will be slightly lumpy and this is the consistency you want. (Do not overmix)

2. I always add a bit more to my pancake batter. You can choose to make these Krusteaz Buttermilk Pancake without adding the vanilla, honey and cinnamon and they are just as delicious! (I add these extra ingredients to my batter became that is how my grandmother made them - you see, it's all about the traditions).

3. Let the batter stand for two minutes. Pour slightly less than 1/4 cup batter per pancake onto your a pancake griddle pan (and if you DO NOT have one of these - GET ONE TODAY!!). Cook pancakes 1- 1 1/4 minutes per side, or until golden brown, turning only once.

4. Place one pancake on a late and put about a tablespoon of the homemade Chocolate Chip Cookie Dough on top of this pancake. Place a pancake on top of the first pancake and add another tablespoon of the Chocolate Chip Cookie Dough. Keep going until you have your stack of pancakes.

5. The Chocolate Chip Cookie Dough will start to ooze out a bit and the chocolate chips will begin to melt. Add your final tablespoon of Chocolate Chip Cookie Dough to the top pancake and top with various berries. Pour a bit of syrup on top if you like, sprinkle some powdered sugar on top too if you like that.

ENJOY!

Now you will have some of the Homemade Chocolate Chip Cookie Dough leftover. Save it, put it in the back of the refrigerator so no one sees it. Once everyone goes t bed, dig around int eh back of the fridge for that hidden bowl. Grab some graham crackers or something like that and dip it in, scoop it out and eat the rest all by yourself.

My grandmother says to spoil yourself! And I totally do!
