When Starbucks rolls out their favorite fall seasonal lattes, I really am in coffee heaven. Is that a thing? The Pumpkin Spice Latte is my ultimate favorite seasonal drink in the fall, but this momma can’t be going to Starbucks everyday. ☺ Ya’ know?!

However, the only bad thing about the Pumpkin Spice Latte and PSL syrup is, that, the famous, most delicious latte syrup has dairy in it. I can not have dairy of any sort, so I have to make my own PSL latte and in order to do that, I need the Pumpkin Spice Syrup. So first off, l need to make my own Pumpkin Spice Syrup from scratch for this recipe version of the Copycat Starbucks Pumpkin Spice Latte. The best Pumpkin Spice Syrup comes from my very own kitchen.

Pumpkin Spice Syrup

If you think making your very own syrup for coffee sounds too difficult, laborious or too intimidating, I am hear to tell you it is rather simple. Really, all you need is a bit of time and simple ingredients. In less than 30 minutes, you will have amazing Pumpkin Spice Syrup** to use in your Pumpkin Spice Latte!

This recipe will make enough so you can drink Pumpkin Spice Latte all month long!

INGREDIENTS

  • 1 Cup Pumpkin Puree

  • 1 Cup Maple Syrup

  • 1 Cup Water

  • 1 Cup Turbinado Sugar (aka raw sugar)

  • 2 tbsp Pumpkin Pie Spice

See, super simple - 1 cup, 1 cup, 1 cup and 1 cup! {Alternatively, you can make your own Pumpkin Pie Spice blend if you don’t have any by using these ingredients: 1 tbsp Cinnamon, 1/4 tsp Nutmeg, 1/8 tsp Allspice, 1/8 tsp Cloves, 1/2 tsp Ginger} Adjust to your taste.

DIRECTIONS

Add the Pumpkin Puree to a pot and grind a couple turns of black pepper onto the puree and heat for a few minutes. The black pepper and the heat will remove the metal can taste from the pumpkin puree. If you like, you can make your very own pumpkin puree. You can skip this step if you like canned pumpkin puree straight out of the can. Or you can skip this step entirely because you don’t have the time or don’t like pepper. You will not taste the pepper AT ALL in your PSLs! (I promise)

Next add the maple syrup, water, sugar and pumpkin pie spice. Stir and heat through on low heat. Simmer on low heat for approximately 20-30 minutes, stirring occasionally.

Pour the hot mixture into your Vitamix and pulse through. Store in a canning jar in the fridge. The syrup will last about one month stored in the refrigerator. I finish mine before the month every comes to an end.

I have to tell you a sad story though. As I was just finishing up the photos for this posts, I knocked the glass canning jar against my counter top. If you all have granite counters, you know that once you bump anything against them, whatever you bump is going to crack, break or shatter. In this instance, my grandma’s old blue canning jar I was using for my PSL syrup shattered against the island counter. PSL syrup went everywhere! All over my shirt and jeans, and even inside my shoes! I was so sad that I broke my grandmother’s jar the most AND I lost all of my PSL syrup I had just made! SO, here is the point, store in plastic! LOL

PUMPKIN SPICE LATTE RECIPE

INGREDIENTS

1 cup hot strongly brewed coffee OR 1/2 cup espresso if you have an espresso maker

1 cup non-dairy milk (coconut, almond, rice, soy, your choice) OR whole milk works great too

2-3 tbsp Pumpkin Spice Syrup Mixture (from recipe above)**

DIRECTIONS

Brew coffee (coffeepot, espresso maker, single-serving cup, really strong coffee though). Pour 1 cup into a mug.

TO FROTH THE MILK With a handheld frother or Vitamix: Pour 1 cup of non-dairy milk and 2-3 tbsp of the pumpkin spice syrup into your Vitamix. Blend on high for five minutes or put on soup setting. Pour into the cup with the coffee. Add 2-3 tbsp Pumpkin Spice Syrup Mixture and stir to combine.

If you don’t want to froth your milk, simply pour 1 cup of your choice of milk into a cup, heat it up in the microwave or on the stove top and add your hot coffee together. Then add your 2-3 tbsp of PSL syrup and stir.

Top with whipped cream and a sprinkle of pumpkin pie spice on top. Enjoy!

**Side Note: This Pumpkin Spice Syrup is not your typical syrup, as in it won’t be drippy or runny like maple syrup. It will be thick and BUT it WILL completely dissolve in your latte. But if you prefer a more syrupy Pumpkin Spice Syrup, simply add more water and less pumpkin spice puree when you are making the syrup AND strain the mixture through a fine mesh strainer. I don’t mind that this is not super syrupy! And it tastes fantastic!

Additionally, I like really strong coffee and strong flavors, so this Pumpkin Spice Latte has a lot of bold flavor! You can adjust your coffee and spice seasoning to your palette!

This Pumpkin Spice Syrup can also be added to your regular coffee, oatmeal, or on top of pumpkin pancakes. It is delicious!

Now you can make your own Pumpkin Spice Syrup and your very own Pumpkin Spice Lattes like the Starbucks version at home instead. Your wallet will thank you for the holidays!
